Vegetable Sweet Corn Soup – A colourful assortment of juicy vegetables.
- Cream Style Corn : 1 Can
- Frozen Sweet Corn : 1/4 Cup
- Carrots, diced : 1/4 Cup
- Cabbage, chopped : 1/4 Cup
- Cauliflower, chopped : 1/4 Cup
- Green Beans, diced : 1/4 Cup
- Water : 4 Cups
- Corn flour : 2 Tablespoon
- Sugar : 1 Teaspoon
- Coriander leaves (finely chopped) : 1 tsp
- Soy Sauce : 1 tblsp
- Salt to Taste
Method:
In a small bowl mix 1/4 cup of water and corn flour. Keep a large pot on medium heat and add oil. Add carrots, Cauliflower, Green beans, Corn, Cabbage and sauté it for 1-2 minutes. Add cream style corn with salt and mix it well. Bring it to boil. Cook for 5 to 8 minutes on medium heat. Add cornstarch and water mixture to soup. Add Sugar, chopped coriander leaves, soy sauce and cook for 2 more minutes. Serve hot.
