Udupi Sambhar – Taste of Udupi
- Tuvar dal : 1/2 cup
- Fenugreek seeds : 1/2 tsp
- Urad Dal : 1 tsp
- Red chillies : 6 nos
- Coriander seeds : 1 1/2 tblsp
- Curry leaves : 5 springs
- Coconut (grated) : 1/4 cup
- Small onions (cleaned and peeled): 25-30 nos
- Mustards seeds : 1/2 teaspoon
- Asafoetida: 1 pinch
- Green chillies : 2 nos (silted)
- Salt : For taste
- Jaggery : 1 1/2 teaspoons
- Oil : 2 tblsp
- Brinjals, carrots, French beans, Pumpkin, yam (chopped in big size): 2 cups
- Tamarind pulp : (A small ball of tamarind soaked in 1/3 cup of water)
Method :
First cook tuvar dal till it becomes tender and mash it well. In a heavy bottomed pan, put 1 tblsp oil and roast the fenugreek seeds till it becomes light red, then add 1/2 tsp urad dal and let it sauté till the colour changes. Add red chilli and coriander seeds. Add grated coconut and 3 springs of curry leaves and roast it till the aroma comes and it turns light brown. Adding a little water, grind it to a fine paste .In a pan add 1 tblsp oil and add mustard seed. When the mustard seed starts spluttering, add asafoetida and urad dal in it and fry it for a minute. Add green chillies and onions and the rest of the curry leaves. Add all the vegetables that was chopped in big chunks to this and fry till aroma comes out. Add little water and cover and cook till the vegetables are cooked. Now extract juice from tamarind pulp and add to the vegetables. Add bits of Jaggery and salt for taste and cook well. After that add mashed dal and the grounded masala. Mix well and add little water if required. Simmer for a few minutes. Serve Hot
