Rava kesari Recepie
Rava or Sooji : 1 cup
Ghee : 5 to 6 tbsp
Sugar : ¾ to 1 cup
Water: 2 cups
Saffron threads : 2 to 3 pinches
Green cardamom pods : 4-5
Cardamom powder : ½ tsp (powdered)
Chopped cashews : 1/4 cup
Crush the cardamoms, saffron threads to a semi fine powder and keep aside. Take sugar and water in a pan, keep this on a medium to high flame and let it boil.add powdered saffron or kesar to sugar solution. Keep another kadai or pan on a low flame, then add ghee,once ghee becomes hot, add semolina and keep on stirring while adding semolina. Immediately add cashews and keep on stirring the mixture.in the meanwhile keep your eyes on sugar solution. When the mixture starts to boil,lower the flame and let it simmer.keep on stirring semolina for 7-8 mins and when the grains starts changing the color, add the hot sugar and water solution into it.
Increase the flame to high for the sugar solution to boil add the hot semolina mixture in it,be careful as the mixture has the tendency to splutter.be quick to stir and keep on stirring till the whole mixture starts thickening and starts to leave the edge of the kadai or pan.keep a tight lid on the top on the lid.switch off the flame and allow the halwa to steam for 5-6 minutes.Now remove the lid and serve it hot or warm.
