Onion Bhajji
- Bengal gram : 1 cup
- Rice flour : 1/2 cup
- Maida : 1 tbsp
- Salt as required to taste
- Red chilli powder : 1 tbsp
- Cooking soda : 2 pinches
- Oil : to deep fry
- Onions : 6-7 nos
Method :
Select medium sized onions. Peel outer skin and slice into thin rounds.Arrange on a plate carefully without separating the rings. Mix all the dry ingredients in bowl. Pour water gradually and mix the flour without forming lumps till the batter reaches dropping consistency.Heat oil in a deep curved pan.When it smokes dip onion slices one by one in the batter to coat both sides and slip in oil carefully (8 to 10 pieces can be fried at a time or till done.When it turns golden turn over and cook till done.Drain excess oil on a colander or absorbent paper and serve hot.
Note : To obtain crisp Bhajjis,omit maida and add more rice flour.Do not add more soda which makes the bhajji to consume more oil.
