Mango Chutney Recipe
- Mangoes : 2 medium sized (semi ripe,juicy)
- Panch Phoran : ½ tsp – equal mix of cumin, fennel, mustard, & fenugreek seeds
- Peanut oil : 1 tbsp
- Ginger : ½ inch
- Jaggery : 2 tbsp (powdered)
- Red chili powder : ¼ tsp
- Garam Masala Powder : a pinch
- Asafoetida : one pinch
- Salt : as required
Method :
Peel and finely chop the mangoes first Then remove the pulp if the mangoes are very juicy and fibrous and then heat oil in the pan
fry the panch phoran spices till fragrance comes and now add ginger and fry for some seconds till its raw aroma goes away.Then add the finely chopped mango or mango pulp/puree,add red chili powder, garam masala powder and asafoetida and stir it well, simmer for 1-2 minutes. After that add powdered jaggery and salt,stir and cook for 2-3 minutes.transfer the mango chutney in a bowl and serve it warm.
