Garlic Pickle
- Garlic : 1/4 kg (Peeled)
- Salt : 2 tsp
- Chilli powder : 2 tsp
- Turmeric powder : 1/2 tsp
- Asafoetida : 1/2 tsp
- Coriander Seeds : 2 tblsp
- Fenugreek powder : 1/2 tsp
- Mustard powder : 1/2 tsp
- Mustard seeds : 1 tsp
- Curry leaves : 1 sprig
- Dry red chillies : 2-3 nos
- Gingerly oil : 2 tblsp
- Vinegar : 2 tblsp
Method :
Peel garlic and keep it aside. In a pan dry roast fenugreek seeds, mustard seeds, coriander seeds and powder it. Mix salt,chilli powder, turmeric powder and the other dry roasted ingredients in a small bowl. Heat oil in a pan and pop the mustard seeds. Add dry red chillies, asafoetida and curry leaves. Now add the peeled garlic and saute in low flame for few minutes till it gets a little soft. Add the mixed spice powder and cook on low flame till oil oozes out and remove from stove. After it cools down, add vinegar. Store pickle in an air tight container.
