French Onion Soup
- White Onion : 4 nos
- Butter : 1 1/2 tablespoons
- Garlic : 1 flake (Crushed)
- Sugar : 1 teaspoon
- Salt & pepper : as required
- Clear vegitable stock : 1 1/2 cups
(Prepared from white vegitables) (or) water cheese croutons :
Grate chedder cheese (Cooking cheese) using a fine cheese grater.After applying butter to break sprinkle grated cheese on top and keep in oven till cheese melts and bread become crisp.(or) slice the cheese into thin layers and put it on top of the cut bread.Bake in oven till cheese melts and bread turns crisp.
Peel outer skin from the onions and blanch in hot water for 2 to 3 minutes.Drain and pour cold water.(This removes strong taste of the onions) Take out from water and chop onions into thin lengthwise pieces.Heat butter in a pressure pan and fry crushed garlic and then sliced onions in reduced flame.Sprinkle salt and sugar while frying onions.When it turns transparent,pour stock 0r water to cover it and pressure cook in reduced flame for 6 minutes (till the onions turn soft).Remove lid,dilute the soup with more water and reheat.Serve with cheese croutons and more grated cheese sprinkled on top.
