Egg Raita
- Fresh curds : 1 cup
- Eggs : 4 nos
- Green peas : 1 cup shelled
- Lime juice : 1 tbsp
- Chilli powder : 1/2 tsp
- Salt : as required
- Turmeric powder : 1/4 tsp
- Chopped coriander leaves : 1 tbsp
- Asafoetida : a pinch
- Garlic : 4 flakes
- Cumin seeds : 1/4 tsp
- Fenugreek seeds : 1/2 tsp
- Oil : 2 tbsp
Method :
Beat Thick curds with salt,turmeric,chilli powder and lemon juice,till it becomes smooth.Keep aside for three hours atleast before serving. Boil eggs,shell and keep aside.Cook green peas in boiling water till soft. Drain and add to curds.Heat oil put fenugreek,cumin,slit green chillies,garlic flakes and asafoetida. Pour over curds.Fold boiled eggs and cut coriander leaves.Leave for one hour and serve at room temperature.
