Egg pickle
- Hard boiled eggs : 8 nos
- Vinegar : 2 cups
- Cinnamon : 1 inch piece
- Cloves : 6 nos
- Mustard powders : 1 tbsp
- Pepper corns : 10 (Pound coarsely)
- Red chillies : 20 nos
- Garlic : 3 flakes
- Ginger : 1/4 inch piece
- Salt & sugar as per taste
Method :
Crush garlic and ginger.Mix this with vinegar and other spices. Heat in a low flame for few minutes till all the flavours blend. Then add salt and sugar.Set aside till it cools down. Prick boiled eggs using a fork or tooth pick all over.Fry this in little oil till light brown in colour on all sides. Pack these eggs in a clean preserving jar.Pour prepared vinegar on top till eggs are immersed completely. Tie a fine muslin cloth on top of the jar and keep under sun for one or two days.Use it after two days.Mix gently with a clean laddle every alternate day.
