Corn Chili Masala
- Corn kernals : 2 cup
- Chopped capsicum : 1 cup
- Tomato : 3 cup
- Garam masala : 1tsp
- Turmeric : 1/2 tsp
- Bottle gourd : 1 cup
- Red chili powder : 1tsp
- Cashew nut pieces : 2 tbsp
- Green chilies : 2 nos
- Ginger : 1 inch
- Dried fenugreek leaves : 1tsp
- Salt : 1tsp
- Sugar: 1tsp
- Refined oil : 3 tbsp
Method :
- First of all Pressure cook corn kernels with one cup of water for 2 whistles and drain and keep it aside.
- Peel and chop the bottle gourd then chop tomato, chilli and ginger into small pieces. Then Heat 1.5 tbsp oil in pressure cooker and add tomato, chilli, bottlegourd and cashew pieces and sauté for 1 minute .
- Add 2 tbsp water and pressure cook for 2 whistles on medium flame .
- When cooled, grind and make it a fine paste.
- Heat 2 tbsp oil in a pan and add chopped capsicum and sauté for a minute, drain and then keep aside.
- Add grated ginger and boiled corn in the same pan and sauté for a few seconds.
- Add dried fenugreek leaves and all the spices and the grounded tomato paste.
- Mix and add 3/4 cup water and cover it with a lid and cook for 3-4 minutes.
- Then add sugar and fresh coriander leaves and serve hot.
