Cofee Icecream Sandwich
Ingredients:
Butter : 1/2 cup
Castor sugar : 1/4 cup
Atta : 1 cup flour
Cofee : 2 tbsp
Cofee Ice cream : 2 cups
Cocoa : 2 tbsp
Sugar : 2/3 cup
Method :
Grease two or three baking sheets.Whip butter and castor sugar for a few minutes. Mix cofee with atta. Add butter-sugar Mixture and knead like flour. Wrap the mixture in a small plastic sheet and put it in a refrigerator for 1-2 hours. Choose a clean and level spot. Spread a layer of icing sugar. Knead atta over this layer for 3-4 minutes. Roll out the dough like a roti using a pastry cutter,cut out sixteen round biscuits from this roti.put these biscuits in a tray. Put the tray in a refrigerator for an hour . Bake biscuits in an oven at 150 degrees C for 30 minutes and keep them aside to cool. Put cofee icecream in equal quantity over each of the eight biscuits. Cover them with the remaining eight biscuits and keep them in a freezer to firm. Sprinkle cocoa powder and serve chilled.
