Coconut Milk Kheer
- Coconuts : 2 cups
- Rice : 1 cup
- Ghee : 1 cup
- Cashew bits : 2 tbsp
- Jaggery : 250 gms
- Milk : 1 litre
- Raisins : 2 tbsp
- Powdered cardamom : 1 tsp
- Scrape Coconut and extract milk.
- Add milk to the water scrapings and get thin coconut milk.
- Boil rice in the diluted coconut milk.
- When almost cooked, add milk and boil until the whole milk is absorbed.
- Repeat until all the milk is used up.
