Aloo Bhujiya Sev
- Potato (boiled) : 350 gm
- Gram flour : 2 cup
- Cloves (powdered) : a pinch
- Mint (powdered) : 1.5 tsp
- Red Chili powder : 1.5 tsp
- Asafoetida: 1/4 tsp
- Turmeric : 1/3 tsp
- Salt : 1 tsp
Method :
Boil the potato and then peel and grate with a fine grater. Take the grated potato in a bowl and mix all the spices in it. Add gram flour and mix it properly. It should form a soft and smooth dough. Now grease a sev maker or kitchen press then attach the thin or medium thickness sized plate to the kitchen press.Then make a log of the dough and and fill it in the kitchen press. Now heat enough oil in a wide and deep pan. Press the sev directly in the pan by pressing the dough through the kitchen press. Let it cook on medium heat from one side,but do not stir it in between. Flip it over carefully When it become slightly crisp. Now let it cook from other side till golden and crisp.Drain on a paper napkin and let it cool down completely. Then crush them slightly to make small pieces. Store it in a air tight jar.
Note :
The quantity of gram flour you use depends on the quality of potato,you may need little less or some more gram flour to add in the potato mixture to adjust the consistency of the dough. Adding mint powder is an option instead of adding garam masala.
